Mexican Layers is a delicious dish that is quick and easy to prepare. A good midweek meal requiring no effort, your family will ask you to cook this dish more often than you would believe. This recipe uses a subtle blend of spices, Mexico Masala, which is in perfect harmony with the other ingredients of this dish. Preparation time is only 15 minutes, and then 45 minutes cooking time. Accompanied by a crunchy salad, Mexican Layers is a satisfying meal that is irresistible! This recipe is for 4 to 6 portions.

 

INGREDIENTS 

 

* 10 ml (2 teaspoons) vegetable oil (canola)

* 2 chopped onions

* 3 garlic cloves (pressed)

* 450 g (1 lb) of minced veal

* 20 ml (4 teaspoons) of Mexico Masala by ohmasala.com

* 400 ml (one 19 oz can) of black turtle beans (rinsed and drained) (CLIC brand is great)

* 6 potatoes, peeled and cut into 2 mm (1/16¨) thick slices

* 400 ml (one 19 oz can) of tomato juice

* 120 ml (1/2 cup) of well rinsed and chopped cilantro (corriander) leaves and stems

 

PROCEDURE

 

* Use a medium sized pan with a thick bottom for stove-top cooking,

Or transfer the cooked meat to a pyrex dish if you prefer using the oven.

* Cook the onion in the oil on medium heat until lightly golden.

* Add the garlic, the veal and the Mexico Masala and cook while stirring for a few minutes.

* Spread the mixture evenly in the bottom of the pan (or transfer to pyrex dish if you prefer using the oven).

* Add the layer of black turtle beans, and then the tomato juice.

*Then add the layer of sliced potatoes. Press down on the layers to compress a little. The juice should cover the potatoes a little bit.

* Gently bring to a boil, then cover and cook on low heat for 30 minutes, or until the potatoes are cooked.

* If you prefer using the oven, cover the pyrex dish with aluminium foil and place in a pre-heated (350*F) oven. Cook for 60 minutes, or until the potatoes are cooked.

* In both cases, uncover at this point and continue cooking for another 15 minutes.

* With the evaporation, the volume of liquid will decrease and the sauce will thicken.

* Serve with freshly chopped cilantro (corriander) on top, and plain yogurt on the side.
