Zan Chicken is a succulent dish that is certain to become a family favorite. Imagine, juicy pieces of chicken coated in a creamy sauce perfumed with Indian spices. Once you taste it, you will quickly realize that the sauce is not rich and fatty, but delightfully smooth and light. A real treat! Zan Chicken accompanies basmati rice and subji very well.

Plan on 30 minutes of preparation time, and know that the sauce must simmer for one hour. However, it will give you 800 ml of Zan sauce concentrate, which can serve 16 people. I suggest that you make this recipe in its entirety, and freeze the extra concentrated sauce in 200 ml portions (1/2 + 1/3 cup) (4 portions). Your future meals will be ready in no time!

INGREDIENTS (concentrated sauce) (16 portions)

* 30 ml (2 tablespoons) of vegetable oil (canola)
*1000 ml (4 cups) (6 medium onions) chopped, very firmly packed
*20 ml (4 teaspoons) of Daal Masala by ohmasala.com
* 10 ml (2 teaspoons) of Tandoori Masala by ohmasala.com
* 10 ml (2 teaspoons) of Kima Masala by ohmasala.com
* 796 ml (28 oz can) of diced tomatoes
* 7.5 ml (1 ½ teaspoons) of salt
* 2.5 ml (1/2 teaspoon) of sugar

For each 4 portions (Zan Chicken)

* 120 ml (1/2 cup) of stems and leaves of well rinsed and chopped cilantro
* 240 ml of plain yogurt 2% m.f. (or 2.5% m.f.) , OR 120 ml of cream (15% m.f.).
* 500 g (1.1 lbs) of chicken breasts cut into 2.5 cm (1”) cubes
* 200 ml (1/2 + 1/3 cup) of Zan concentrated sauce

PROCEDURE (concentrated sauce)

* In a large pan with a thick bottom, cook the chopped onions in the oil on medium heat for 20 minutes.
* Stir occasionally. If the onion begins to brown, lower the heat a little. The goal is to cook the onion as much as possible with a minimum of browning.
* Add the Daal Masala, the Tandoori Masala, and the Kima Masala and cook while stirring for 2 minutes.
* Add the tomatoes, the salt, and the sugar and stir well. Cover and let simmer on medium-low heat for one hour.
* Transfer to a blender and blend until the Zan concentrated sauce is smooth.

PROCEDURE (Zan chicken) * For each 4 portions :

* Pour 120 ml (1/2 cup) of water into a pan and bring to a boil. Immediately add the chicken (500 g).
* Cook (partially) for 5 minutes on medium-high heat, without covering. Stir a little to seperate the pieces.
* Add 200 ml (1/2 + 1/3 cups) of Zan concentrated sauce and stir well to coat the chicken. Cover the pan almost completely and let simmer on low heat for 15 minutes. Stir occasionally.
* Add 240 ml (1 cup) of plain yogurt. Stir well, cover, and let it warm up slowly on low heat (10 minutes).
* It is normal for the heated yogurt to appear granular, but the texture will not be affected. You may want to beat the yogurt vigorously with a wisk before adding it to avoid this from happening, or use cream (15% m.f) instead.
* Before serving, top with freshly chopped cilantro.
